Soup with Rice Noodles, Veal and Vegetables

Ingredients

A handful of rice noodles

2 veal steaks, sliced into thin strips

2 cloves of garlic

1 thumb-sized piece of ginger

1 rib of celery, diced

1 carrot, sliced into thin strips

5 button mushrooms halved

Half a courgette, sliced

Half a red pepper sliced
-
1 vegetable stock cube

Olive oil
Method

Heat a splash of olive oil in a wok over a medium heat.

Add the veal and allow to brown.

Once it has a touch of colour add the celery, carrot, mushrooms, courgette and pepper.

Allow to fry for 2-3 minutes and add enough boiling water to cover the ingredients.

Add the stock and let it dissolve.

Then grate in the ginger and garlic.

Allow to cook until the carrots begin to become tender.

At this point add the noodles.

The noodles will generally cook in two to three minutes, but check the package instructions to make sure.

Serve immediately. Enjoy!
