Sweet Potato & Parsnip Soup

Soup

 

Ingredients

 

 

  • 3 large Sweet potatoes
  • 4 Parsnips
  • 4 Small onions
  • 1 Vegetable stock cube

                                                                                                                                                                                               

Method

 

  1. Boil a medium pan half full of water
  2. Peel the potatoes, parsnips and onions, dice
  3. Once boiling add the veg
  4. Add the stock cube
  5. Allow to boil until potatoes and parsnips are soft 
  6. Carefully pour into a food mixer and blend
  7. Serve and enjoy!

 

Freezes well can be refrigerated for up to 4 days
