
Ingredients
- 3 large Sweet potatoes
- 4 Parsnips
- 4 Small onions
- 1 Vegetable stock cube
Method
- Boil a medium pan half full of water
- Peel the potatoes, parsnips and onions, dice
- Once boiling add the veg
- Add the stock cube
- Allow to boil until potatoes and parsnips are soft
- Carefully pour into a food mixer and blend
- Serve and enjoy!
Freezes well can be refrigerated for up to 4 days
