Ingredients

- 8 Swordfish Steaks
- Olive oil
- 1 Red Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- 1 Yellow Bell Pepper , chopped
- 1 Shallot, diced
- 1/2 Cup Fish Stock
- A splash of Tabasco Sauce
- Oregano to taste
- Salt
- Pepper
Method
- Season the sword fish with a little salt and pepper.
- Grill on a low light for 8-10 minutes until cooked through.
- Sauté peppers & shallots in olive oil in a frying pan, allow to caramelize
- Add the fish stock and seasoning.
- Allow it to simmer on a lower light while the swordfish cooks
- Serve and enjoy!
