Fresh Lobster With Spaghetti

 

Ingredients

 

  • 300g/10oz wheat-free spaghettiSpagetti and lobster
  • Olive oil
  • 2 garlic clove, finely chopped
  • 400ml/14fl Soya cream
  • 2 shallots, finely chopped
  • 200ml/7fl oz white wine
  • 2 x 750g/1lb 10oz cooked lobster, shelled and cut into chunks
  • 2 limes, juice only
  • 5 cherry tomatoes
  • Salt
  • Pepper

 

Method

 

  1. Heat a large frying pan until hot.  Add the olive oil, stir in the garlic and shallots, Fry for 1-2 minutes.
  2. Pour in the white wine and cook until it reduced by half the pan.
  3. Add the cream and bring to a simmer, add the lobster. 
  4. Squeeze in the lime juice and season to taste with salt and freshly ground black pepper.
  5. Meanwhile, cook the wheat free spaghetti according to packet instructions and drain.
  6. Mix the wheat free spaghetti with the lobster sauce until well combined.
  7. To serve, pile the wheat free spaghetti onto a plate and finish with cherry tomatoes.
